I've owned the car a total of two days. I'm still getting used to the keyless ignition and it seems I forgot to turn the engine off for a hour or so. Is this expected when the key isn't within a specific range of the vehicle?
My brother's RR did that. Do you have or can you add Car Connect?

Your understanding is wrong and would also be dangerous. Imagine if the car had shut down while you were on a freeway entrance ramp or something of the sort. Or coasting toward a red light at a busy intersection....My husband drove the macan to the airport where I was dropping him off. He left the car on and I jumped in the drivers seat. As soon as he was a certain distance away the car stopped . I had to restart the car again so it could register my keys. So my understanding is the car should not stay on if you walk away with the keys.
The whosit (that's the technical term) dings when you open the door while the engine is running. Isn't that enough of a reminder to turn it off? FWIW, I find that ding really annoying - it's a different sound than any of the other cars I've had & I'm finding myself turning off the ignition before unbuckling my seat belt just to not have to hear it. Yeah, I know - if that's my biggest complaint....

Sadly there are folks who buy dummy seatbelt buckles to stop warnings like that and never wear seatbelts. Darwinian selection is still alive and well - it may not be the crash that gets them but the CO....
